Ingredients
- 1/2 cup water
- 1/4 cup corn syrup
- 1 3/4 cup butter
- 2 1/2 cup white sugar
- 1/2 lb. almonds, finely chopped
- 1/2 lb. dipping chocolate or 1/2 lb. milk chocolate chips
- Additional chopped almonds

Step 1
Combine water, corn syrup, butter and sugar in a saucepan. Cook over medium heat, stirring constantly until sugar is dissolved and mixture starts to boil. Put on lid and steam down side of pan (about 1-3 minutes) Remove lid and cook, stirring constantly until mixture reaches 293 degrees. Add 1/2 lb. almonds slowly and continue to cook until 295 degrees. (this will toast the almonds)
Pour out on greased cookie sheet; mark into squares. Cool; coat with melted dipping chocolate. Sprinkle additional almonds on top and let cool.
The texture of this candy seems better after it has set for a day or so.
