Ingredients
- 1 pound ground beef ( use lean beef to cut calories)
- 1 large onion, chopped
- 1/2 cup salsa
- 2 TBSPs taco seasoning
- 1/4 tsp pepper
- 1 cup (4 oz) shredded cheddar cheese (Use lowfat to reduce fat)
- 2 eggs
- 1 cup milk
- 1/2 cup biscuit/baking mix

Preparation
Step 1
1) In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in alsa, taco seasoning and pepper. Transfer to a greased 9 in pie plate; sprinkle with cheese.
2) In a large bowl, combine the eggs, milk and biscuit mix just until blended; pour over cheese.
3) Bake at 400 degrees for 25-30 minutes or until a knife inserted near the center comes out clean.
