Ingredients

  • 4 T. (1/2 stick) butter
  • 3 squares (3 oz.) unsweetened chocolate
  • 2 C. cake flour
  • 2 T. cocoa
  • 2/3 C. sugar
  • 1 tsp. baking powder
  • 1 1/4 C. milk
  • 1 egg
  • 1 tsp. vanilla
  • Bittersweet chocolate ice cream

Preparation

Step 1

1. Melt the butter and chocolate together over low heat, stirring frequently, or melt in a small bowl in the microwave. (In a microwave, do the chocolate first for 1 minute, then drop in the butter and microwave about 30 seconds more.)

2. Sift the cake flour, cocoa, sugar and baking powder together into a large bowl. Beat the milk, egg and vanilla in a small cup and pour into the dry ingredients along with the chocolate mixture. Beat until blended, but don't worry if the batter isn't perfectly smooth.

3. Scoop the batter into a hot waffle iron (each 4-inch waffle takes about 1/4 C. of batter) and bake for about 2 minutes, or until the steaming stops and the waffle is cooked through. (Tear open the first one just to be certain.)

4. Serve hot or let them cool, wrap them airtight and refrigerate until serving time.

5. Reheat them in the toaster. Serve with a small scoop of bittersweet chocolate ice cream. Makes about 10 4-inch squares.
