Ingredients

  • 1 cup ground hazelnuts
  • 1 1/2 lbs flour
  • 1 lb 2 oz. butter
  • 3/4 cup orange juice
  • 1 1/2 cups whipping cream
  • 1/3 cup sugar
  • 1/2 Tbs salt
  • 1 tsp baking powder
  • 1 lb semi-sweet chocolate

Step 1

To make the pastry, first cut the butter into bits and chill. Mix sugar, salt, flour, baking powder and ground nuts. Mix in cold butter and orange juice. Press the dough into a flat square and cover with plastic wrap. Let rest at least 20 minutes. Roll the dough out and cut into circles the size of a tuna can. Put the cut dough in the refrigerator for 10 minutes.

For the chocolate filling, melt the chocolate and cream together over a water bath in a double broiler. Pour into a shallow tray lined with plastic wrap. Refrigerate at least 1 hour until firm. Use a small scoop or spoon to scoop out the chocolate and roll into balls. Refrigerate again for 10 minutes.

To make the ravioli, brush an egg wash (one egg with a splash of milk) over the cut circles of dough. Add the chocolate in the center and fold the edges of the dough together. Pinch them closed and brush more egg wash on the outside. Return them to the refrigerator for 10 more minutes. Bake at 400 degrees for 10 minutes.
