Ingredients

  • 1 large can tomato juice
  • 1 can chopped tomatoes (any size will do, fire roasted are especially good)
  • 1 onion, chopped
  • 2-3 cloves garlic
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon olive oil
  • 1 teaspoon cumin (whole seeds crushed, or the ground kind)
  • 2-3 limes
  • tortilla chips
  • grated monterey jack cheese

Preparation

Step 1

Saute onions in oil for 3-4 minutes, or until soft. Add garlic and pepper flakes and saute one more minute. Add tomato juice and tomatoes and simmer 15-20 minutes. Squeeze in lime juice and serve, sprinkled with crushed tortilla chips and cheese.
