Ingredients
- 3/4 cup oil
- 1 cup sugar
- 2 eggs
- 3 – 1 oz. squares semi-sweet chocolate, melted
- 1 cup grated zucchini, unpeeled
- 1 1/2 cups flour
- 1 tsp cinnamon
- dash of nutmeg
- 3/4 tsp soda
- 1 tsp baking powder

Step 1
Blend oil and sugar. Beat eggs into oil mixture, one at a time. Add chocolate and blend well. Place grated zucchini in a separate bowl. Fold egg mixture into zucchini. Sift together flour, cinnamon, nutmeg, soda and baking powder. Gradually add flour mixture to zucchini mixture and mix well.
Pour into greased 9 x 5 pan. Bake at 325 degrees for 1 hour.
