Ingredients
- 1 T. olive oil
- 1/2 C. onion, diced
- 1/4 slice bacon, chopped (optional)
- 3 cloves garlic, minced
- 1/2 tsp. jalapeno pepper, finely chopped
- 1 T. chili powder
- 1/4 tsp. thyme
- 1/4 tsp. oregano
- 1/4 tsp. fresh ground black pepper
- 1/4 tsp. tabasco
- 2 tsp. fresh cilantro, chopped
- 1/2 C. red wine
- 1.5 oz. Veggie Glace Gold
- 2 C. tomatoes, peeled and diced
- 1 T. tomato paste
- 1 C. water
- 1 C. white corn, pre-cooked (canned is fine)
- 1 lb. penne pasta

Preparation
Step 1
1. Cook penne pasta according to package directions.
2. Saute onion and bacon in olive oil. Add garlic, jalapenos, chili powder, thyme, oregano, black pepper, tabasco and half of the cilantro. Add the red wine and reduce by half, then add the Veggie Glace Gold, tomatoes and tomato paste. Stir until Veggie Glace Gold is completely dissolved. Add water and corn, return to a simmer.
3. Toss with cooked penne pasta and serve.
