Ingredients

  • 1 lb. egg dough
  • 12 garlic cloves
  • 1/2 C. butter
  • Salt and pepper to taste
  • 3 T. fresh sage
  • 1 C. Ricotta cheese

Preparation

Step 1

1. In a small pan add 1/2" of water and place whole garlic cloves in with the top cut off. Cover with foil and roast for 30 minutes.

2. Roll out pasta to 1/16" and cut two circles 7" wide.

3. In a stainless bowl, squeeze out roasted garlic and add sage, salt pepper and ricotta cheese. Mix thoroughly. Place 3 oz. of filling in the center of one circle, leaving 1/2" around sides. Place the other circle on top and seal. Egg wash may be 1required to seal the two pastas together.

4. Cook in boiling water and toss with melted butter and fresh sage.
