LASAGNE - SPINACH

Ingredients
- 1/2 lb. mozzarella cheese, grated
- 1/2 lb. Monterey Jack cheese, grated
- 8 oz. cooked lasagna noodles
- 2 packages frozen chopped spinach, thawed and squeezed dry
- 1 C. Parmesan cheese
- 1 qt. (or less) low-fat cottage cheese
- 2 eggs
- 3 T. melted butter
- 2 garlic cloves, crushed
- 1 package fresh mushrooms
- Seasonings (basil, oregano, pepper, etc.)
- Olive oil

Preparation
Step 1
1. Cook lasagne noodles according to package directions. Drain and rinse. Set aside.
2. Preheat oven to 350 degrees.
3. To prepare ingredients: Grate cheese and set aside. Thaw spinach and set aside. Measure Parmesan cheese and set aside. Combine cottage cheese with eggs, melted butter and garlic. Set aside. In frying pan, saute mushrooms in olive oil. Add seasonings to taste.
4. To assemble lasagne: In greased 9x13 inch pan, layer 1/2 noodles, 1/2 cottage cheese mixture, 1/2 mozzarella and Monterey Jack cheeses, 1/2 spinach, 1/2 mushrooms and 1/2 Parmesan cheese. Repeat layers. Bake uncovered in 350° degree over for 30-40 minutes.
