Ingredients
- 12 oz pkg. basil garlic fettucine or linguini, cooked
- 1 large or 2 small heads of garlic, roasted
- 2 C. whipping cream
- 1/2 tsp. salt, or to taste
- freshly ground pepper
- 1/4 C. fresh herbs, (tarragon, parsley, chives) chopped and combined
- 1/4 C. freshly grated Parmesan cheese

Preparation
Step 1
1. Roast garlic bulbs in 350 degree oven for 30 minutes, then cool.
2. Make pasta according to package directions.
3. Place cream in a large, heavy pan and reduce to 1/2 over medium heat consistency is achieved (be sure to watch closely to prevent boiling over). Remove the garlic cloves from their skin and puree. Add to the cream and mix well. Add the salt, pepper and herbs. Taste for seasoning.
4. Toss the pasta with the sauce and heat through. Stir in Parmesan cheese and tomatoes. Remove the pasta to a serving bowl, or place individual portions on separate plates. Garnish with additional fresh herbs and parmesan.
