Ingredients

  • 1 T. oil
  • 1 lb. cooked pork roast, cubed or shredded
  • 1 c. onion, chopped
  • 1 c. green pepper, cut into 3/4-inch cubes
  • 1 c. red pepper, cut into 3/4-inch cubes
  • 1 t. garlic, minced
  • 8-oz. can pineapple chunks, drained
  • 1 c. catsup
  • 1 T. brown sugar, packed
  • 1 T. white vinegar
  • 1/2 t. salt
  • 1/4 t. pepper
  • cooked rice

Preparation

Step 1

Heat oil in a large skillet over medium heat. Add pork, onion, peppers and garlic to oil. Cook, stirring occasionally, for 5 to 10 minutes, until heated through and vegetables are tender. Drain; add remaining ingredients except rice. Cover and simmer 10 minutes, until warmed through and slightly thickened. Serve over hot rice.

Serves 6 to 8.
