Scalloped Corn (with Saltines not Cornmeal)

Ingredients

  • 2 Cups Fresh Corn
  • 2 Large Eggs, beaten
  • 1 Cup Milk
  • 2/3 Cup Bread or Saltine Cracker Crumbs
  • 1 Tbs. Onion, minced
  • 3 Tbs. Butter, melted
  • 1/2 tsp. Salt
  • 1/4 tsp. Pepper
  • 1 Tbs. Sugar

Preparation

Step 1

Preheat oven to 350 degrees. Lightly grease a 2 qt. casserole; set aside. Combine all ingredients in a large mixing bowl and mix until well blended. Spoon the mixture into the prepared dish. Bake for 40 minutes until bubbly and golden.
