Ingredients
- 1 cup sugar
- 1 Tbsp butter
- 2 tsp flour
- pinch of salt
- juice and rind of 1 lemon
- 2 well beaten egg yolks
- 1 cup milk
- well beaten whites of 2 eggs
- unbaked pie shell

Preparation
Step 1
Cream sugar and butter. Add flour, salt, lemon juice and rind, egg yolks and milk. Fold in egg whites. Pour into pie shell. Bake at 400°F for 10 min and then at 350°F for 30 min. It makes a sponge cake on top and lemon jelly on the bottom.
