Ingredients
- 3 (15 1/2 oz) red kidney beans, drained
- 2 12oz whole kernel corn
- 1 1/2 C. cider vinegar
- 1 C. sugar
- 3 medium sized onions, sliced
- 2 t. mustard seeds
- 1 t. cracked black pepper
- 3 T. cornstarch

Preparation
Step 1
In large bowl, combine beans and corn with its liquid; set aside. In large saucepan over medium heat, heat vinegar, sugar, onions, mustard seeds, and cracked pepper to boiling. Cover and cook until onions are tender, about 5 minutes.
Meanwhile, combine cornstarch and 1 cup water until blended. Gradually add cornstarch mixture to vinegar mixture and cook, stirring constantly, until mixture boils. Boil 1 minute; remove from heat. Pour vinegar mixture over beans and stir to mix well.
Cover and refrigerate about 4 hours or overnight, stirring occasionally. Makes about 9 cups relish.
