OATMEAL CAKE MIX COOKIES

• 1 yellow cake mix
• 2 cups quick-cooking oats
• 1 cup sugar
• 1 1/2 teaspoons vanilla
• 3/4 cup oil
• 1/4 cup water
• 2 large eggs
• 1 cup chopped pecans
• 2 cups chocolate chips

Preparation

Step 1

Preheat oven to 350 degrees. Lightly grease cookie sheet. Combine cake mix, oats, sugar, vanilla, oil, water and eggs. Stir in pecans and chocolate chips. Drop by rounded teaspoon on prepared cookie sheet. Bake for 12 minutes or until lightly browned. Remove from oven and leave on pan for 1 minute before removing to wire rack. Cool completely.

Variations:

Omit 1 cup of chocolate chips and add 1 cup craisins.

Omit chocolate chips and add 1 cup white chocolate chips and 1 cup craisins.

Omit chocolate chips and add 1 teaspoon of cinnamon and add 2 cups raisins.
