  • 7 1/2 C. fresh vegetable broth or water
  • 1 1/2 C. dried lentils
  • 1 C. chopped onion
  • 1 C. chopped carrot
  • 1/2 C. chopped celery
  • 1/2 C. chopped parsnip
  • 2 T. low sodium soy sauce
  • 2 t. dried oregano
  • 1/2 t. salt

Preparation

Step 1

Combine broth and lentils in large Dutch oven, and brint to a boil. Cover, reduce heat, and simmer 30 mins. Add chopped onion and next 6 ingds. (onion through salt); cover and simmer 15 minutes.
