- Pizza Dough (recipe above)
- 1 tablespoon olive oil
- 2 links sweet or hot Italian sausage, sliced (1/4 pound)
- 1 cup diced onion
- 1/2 cup diced green pepper
- 1/2 cup coarsely chopped celery
- 2 cloves garlic, minced
- 1 can (8 ounces) tomato sauce
- 1 small bay leaf
- 1 teaspoon oregano
- 1/2 teaspoon thyme
- 1/8 to 1/4 teaspoon cayenne
- 2 tablespoons fresh grated Parmesan cheese
- 1/2 pound shelled and deveined small fresh shrimp (16 to 2G)

Step 1
Prepare pizza dough. Preheat oven to 400°. In medium-sized skillet, heat oil. Saute sausage. until lightly browned; remove from skillet with slotted spoon. Saute onion, green pepper, celery and garlic in same skillet until almost tender, about 5 minutes. Add tomato sauce, bay leaf, oregano, thyme and cayenne. Simmer, uncovered, until sauce thickens and is not runny, about 10 minutes; remove bay leaf. Lightly oil 14-inch round pizza pan. Stretch dough into pan. Spread sauce on dough; dot with sausage; sprinkle with cheese. Bake 25 minutes. Remove pan from oven. Top with shrimp. Return pizza to oven and continue baking 3 to 5 minutes longer or until shrimp turn pink.
