I make this every Thanksgiving... It's great with the rest of the fixing's.... Can be made one day ahead and refridgerated or one month ahead and frozen without toppings. Thaw in fridge and add toppings before baking.

Ingredients

  • 3 boxes frozen chopped broccolli
  • 1 Can cream mushroom soup
  • 4 oz shredded cheddar
  • 3/4 C mayo
  • 2 eggs - beaten
  • Salt to taste
  • 1/2 C butter - melted
  • Crumbled Ritz Crackers

Step 1

Fully cook frozen broccolli & drain thoroughly. While cooking, mix together in large bowl: eggs, soup, cheese, & mayo. Add broccolli to mixture - mix well. Pour into 9 X 13" baking dish - spread crumbled Ritz crackers over top. Drizzle melted butter over crumbs. Bake at 350 degrees for 45 minutes - uncovered. NEVER COVER WHILE BAKING.
