Ingredients

  • 1/4 cup butter
  • 1 small onion, finely chopped
  • 1 1/2 lbs zucchini, sliced
  • 1 cup cooked corn
  • 1 clove garlic, minced
  • 1 cup heavy cream
  • 4 eggs, beaten to mix
  • 1 cup grated cheddar cheese
  • Salt
  • Pepper

Preparation

Step 1

Melt butter in large skillet. Add onion and sauté until soft. Add zucchini; cover and cook over low heat until tender crisp, stirring occasionally. Mix cooked zucchini and onion with corn and pour into a buttered baking dish. Sprinkle over with minced garlic. In a medium mixing bowl, stir cream into eggs; add half the grated cheese and season with salt and pepper. Pour egg mixture into baking dish, over the vegetables. Sprinkle remaining cheese over top. Bake at 350 F for 30 to 35 minutes or until mixture is set.
