PANCAKES - COFFEE GRIDDLE CAKES

Ingredients
- 1 C. unsifted all-purpose flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1 T. sugar
- 1 large egg
- 2 T. butter or margarine, melted
- 1/2 C. milk
- 1/2 C. coffee concentrate (see Note)
- Oil

Preparation
Step 1
1. In a medium bowl, combine flour, baking powder, salt, and sugar.
2. In a 2-cup glass measuring cup or small bowl, with a fork or wire whisk, beat together egg, butter, milk, and coffee.
3. Add coffee mixture to dry ingredients and stir just until combined. Mixture should still be lumpy.
4. Heat griddle or electric frying pan to 350°F or until a little cold water dropped onto griddle rolls off in drops. Oil lightly.
5. Pour batter onto griddle, about 1/4 C. at a time, and fry until bubbles appear on the top surface and surface begins to appear dry. Turn and fry until golden on other side. Serve immediately.
Note: Add 1 1/2 tsp. instant coffee to 1 1/2 C. water.
