Ingredients

  • 2 tablespoons of EVOO
  • 1 tablespoon of unsalted butter
  • 1 ¼ cup diced yellow onion
  • 3 tablespoons slice garlic
  • 1 teaspoon of Roasted Garlic Puree
  • 1 ½ teaspoons of sugar
  • ½ teaspoon red pepper flakes
  • ¼ teaspoon Cajun Seasoning
  • 1/8 teaspoon black pepper
  • 1/8 white pepper
  • 1/8 habanero chile powder
  • 1 ½ cups diced plum tomatoes
  • 2/3 cup water
  • 2 tablespoons red chile paste
  • Pinch of salt
  • Shrimp

Preparation

Step 1

In a medium sauté pan, heat oil and butter over medium heat. Add the onions and cook stirring frequently for 15 minutes until they caramelize but not burn. Turn the heat to low and add sliced garlic and garlic puree, sugar, red pepper flakes, black and white pepper and habanero chile powder. Cook an additional 5 minutes. When garlic softens, and begins to turn brown, stir in the tomatoes, water and chili paste. Bring to a simmer and cook over medium heat for 10 minutes. Mix in the salt.
