Ingredients

  • Pecans:
  • • ½ cup pecans
  • • 2 tbsp. sugar
  • • Pinch of cinnamon
  • • Pinch of ground cloves
  • • Pinch of cayenne pepper
  • • Generous pinch of sea salt
  • • Splash water
  • Salad:
  • • 1 bosc pear
  • • 1 small head bibb lettuce
  • • 1 small head radicchio
  • • Carmelized pecans
  • • Extra-virgin olive oil
  • • White wine vinegar

Preparation

Step 1

Caramelized Pecans:

Preheat oven to 325 degrees and line a small cookie sheet with aluminum foil.

Mix everything but the pecans in a small saucepan over medium heat. Stir until combined and become liquidy. Add pecans, stir for 1-2 minutes until well coated. Spread out on cookie sheet and bake for 8-10 minutes (tossing once or twice), until golden. Cool completely before sprinkling over the salad.

Salad:

Toss the greens together. Chop up pear in small pieces and add to salad. Add the olive oil and vinegar and pecans and toss together. Chill for a few minutes.
