Easy Lasagna Rolls

Easy to customize for fussy family members: meat sauce but no veggies; meat sauce with all or some of veggies; vegetarian sauce. Cook in separate casseroles to suit.

Ingredients
- 12 whole wheat lasagna sheets
- 4 cups baby spinach leaves
- 1 tub light cottage cheese
- 1 Omega-3 egg, well beaten
- 1/4 cup Parmesan
- 1/4 tsp. ground pepper
- 2 700ml. jars pasta sauce
- 1 cup shredded mozzarella
- 1 pkg. ground beef (cooked and added to 1 of the jars of pasta sauce)
- sauteed vegetables to taste: onion, pepper, zucchini, mushrooms, peas, carrots

Step 1
Preheat oven to 350 degree F. Wash spinach, drain and pat dry. Combine cottage chees, egg, Parmesan and pepper. Cover bottom of casserole with plain pasta sauce. Spread a layer of cottage cheese mixture over 1 lasagna sheet; layer with spinach, meat or vegetarian sauce, choice of vegetables and mozzarella. Carefully roll up lasagna sheet and place seam side down into casserole dish. Repeat, snugly fitting rolls into pan. Spoon remaining plain pasta sauce over top of rolls. Sprinkle with mozzarella. Bake 40-45 mins.
