  • 1 pt plain yogurt
  • 1/4 cup parsley, chopped
  • 1 tsp thyme
  • 1 tsp salt
  • Pepper to taste
  • 4 cups zucchini, sliced
  • 2 large onions, sliced
  • 2 cups bread crumbs

Preparation

Step 1

With an electric mixer, whisk or an egg beater, blend yogurt with parsley, thyme, salt and pepper. (If the mixture becomes stiff, add a bit of milk). Put alternating layers of zucchini, onions and bread crumbs in a 2-quart casserole and cover all with the yogurt mixture. Bake covered, at 375 F or 190 C for 45 minutes and uncover during the last 10 minutes to brown the top.
