  • 1/4 cup margarine or butter
  • 3/4 cup brown sugar or honey
  • 1 egg
  • 1 cup flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup grated carrots
  • 1 cup grated zucchini

Preparation

Step 1

Preheat oven to 350 F or 180 C. Melt margarine or butter in a saucepan, add sugar or honey, stir until well blended. Remove from heat, beat in egg. Sift together flour, baking powder and salt. Beat flour mixture and carrot and zucchini into butter, sugar and egg mixture. Pour into an 8-by-8-by-2-inch greased pan. Bake for 35 minutes. Cut into squares while slightly warm.
