Ingredients

  • Topping:
  • 3 T. active dry yeast
  • 1 1/4 C. warm water
  • 1/3 C. olive oil
  • 4 1/2 T. sugar
  • 1 T. salt
  • 3 3/4 C. all purpose flour
  • 1/4 C. olive oil
  • 2 medium cloves garlic, finely chopped
  • 3-4 T. fresh rosemary
  • 2 pinches kosher salt

Preparation

Step 1

1. In a bowl, dissolve yeast in the warm water. Allow to active 10 to 15 minutes.

2. In mixing bowl of electric mixer pour yeast mixture, then add olive oil, sugar, salt and flour; mix thoroughly for 5-8 minutes on second to medium speed of electric mixer. Let rest until more than double in size (1 1/2 hours).

3. Divide into two loaves and round tightly, then put in 2 9x5 inch loaf pans.

4. Topping: Apply olive oil over each loaf and on baking pan under each loaf. Sprinkle garlic on each loaf then sprinkle rosemary and salt. Allow to rise until doubled in size with both hands flat, gently press center of each loaf down to 2-3 inches in height.

5. Bake at 325 degrees for 25 minutes.
