This is a great bread with pineapple and macadamia nuts. I like to make it for Christmas.
- 2-8 oz cans crushed pineapple, drained
- 1-3 oz cream cheese, softened
- 1 c sugar
- 1 1/2 teas vanilla
- 1 egg
- 2 c flour
- 1 teas baking soda
- 1 teas salt
- 1/2 c sour cream
- 1/2 c chopped macadamia nuts
Beat cream cheese until fluffy. Gradually beat in sugar until smooth. Blend in vanilla and then the egg. Stir together flour, soda and salt. Add the dry ingredients to creamed mixture alternately with sour cream. Stir in the pineapple and nuts. Spread into 9" loaf pan. Bake at 350 for 70 minutes. Cool for 10 minutes and remove from pan.
