Ingredients
- 12 hard-boiled eggs, peeled and coarsely chopped
- 3/4 C. mayonnaise
- 1/4 C. chopped scallions
- 1 1/2 tsp. curry powder
- Salt and pepper to taste
- 2 loaves (20 oz. each) raisin walnut
- bread, sliced
- 1 bunch watercress, cleaned and trimmed, for garnish

Preparation
Step 1
In medium bowl combine eggs, mayonnaise, scallions, and curry powder. Season with salt and pepper.
With 2"round cookie cutter, cut bread into rounds. Spread with egg salad and top with watercress sprig.
