Brunch Baked Eggs

Ingredients
- 6 cups (24oz) Monterey Jack cheese, shredded and divided
- 12 oz fresh mushrooms, sliced
- 1/2 med onion, chopped
- 1/4 cup sweet red pepper, thinly sliced
- 1/4 cup margarine or butter, melted
- 8 oz cooked ham, cut into julienne strips
- 8 eggs, beaten
- 1 3/4 cup milk
- 1/2 cup all purpose flour
- 2 Tbls fresh chives, basil, tarragon, thyme or oregano, snipped
- 1 Tbls fresh parsley, snipped

Preparation
Step 1
Sprinkle 3 cups cheese in the bottom of a 13"x9" baking dish.
In a saucepan, cook the mushrooms, onion and red pepper in the margarine until veggies are tender, but not brown. Drain well.
Place veggies over the cheese.
Arrange ham strips over veggies.
Sprinkle remaining 3 cups cheese over ham.
Cover and chill in refrigerator overnight.
To serve, combine eggs, milk, flour, chives and parsley.
Pour over cheese layer.
Bake at 350 for about 45 minutes. Let stand 10 minutes before serving.
