  • 1 cup heavy cream
  • 1 cup finely grated Parmesan and Reggioano
  • 1/2 teaspoon salt 1/4 teaspoon freshly ground black pepper

Preparation

Step 1

Cook fettuccine and rapidly boiling water into al dente -- drain -- reserve one quarter cup water.
Melt butter in a medium saucepan.
Add shallots and sauté till tender.
Add heavy cream and bring to boil.
Cook about five minutes until sauce is reduced slightly.
Remove from heat.
