Ingredients
- 1 sheet frozen puff pastry (from a 14 oz. package), thawed
- 1 T. unsalted butter
- 1 small onion, chopped
- 8 fresh artichoke hearts, cooked, or 1 can(14oz.) artichoke hearts, quartered
- 3 eggs
- 1 log (3.5 oz.) goat cheese, softened
- 1 C. milk
- 1 T. chopped fresh tarragon
- 3/4 tsp. salt

Preparation
Step 1
On lightly floured board roll pastry sheet to fit into 8" x 11" tart pan with removable bottom. Chill 30 min.
Heat oven to 375°F.
In saucepan melt butter. Saute onion until soft, 5 minutes. Combine with artichokes. In bowl whisk together next five ingredients. Spoon vegetables in pastry shell; pour egg mixture on top. Bake 30-35 minutes, or until filling has set. Serve at room temperature.
