Ingredients

  • 3 eggs
  • 2 1/2 cups sugar
  • 2 cups ripe figs, mashed
  • 3/4 cup vegetable oil
  • 2 cups flour
  • 1 cup whole wheat flour
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1/4 tsp. cardamom
  • 1/2 tsp. cinnamon
  • 1/4 -1/2 tsp. orange blossom water (optional)
  • 1/2 cup buttermilk
  • 1 cup chopped pecans

Preparation

Step 1

1. Beat eggs and sugar. Add oil and buttermilk; beat well. Add the mashed figs.

2. Sift together flour, soda, salt, cardamom and cinnamon. Slowly add to the fig mixture. Beat well to fully combine.

3. Fold in chopped pecans.

4. Pour into greased and floured loaf pans.

4. Bake at 350 degrees for 1 hour in greased and floured loaf pans.
