Orange Sandwiches Cookies

Basic sugar cookie dough located in cookbook. Use your favorite sugar cookie dough recipe as the foundation for these sandwich rounds filled with orange marmalade and dipped in semisweet chocolate.

- 1 Basic Sugar Cookie Dough (see www.familycircle.com)
- 1 tablespoon grated orange zest
- 1/2 teaspoon orange extract
- 1 teaspoon orange marmalade
- 1 cup semisweet chocolate chips

Step 1
Chill: 4 hours; Bake: 12 minutes- 350F
1. To basic sugar cookie dough, add 1 tablespoon grated orange zest and 1/2 teaspoon orange extract. Divide into 2 disks and refrigerate 4 hours.
2. On lightly floured work surface, roll out one disk to 3/16-inch thickness. Cut into rounds using a 2-inch cutter. Place on ungreased baking sheet. Bake at 350 degrees F for 12 minutes until lightly golden around edges. Remove cookies to wire rack to cool completely. Repeat with remaining dough. Gather scraps and refrigerate. Reroll, cut into additional rounds and bake as above.
3. Spread half of the rounds with 1 teaspoon orange marmalade each. Place remaining rounds over marmalade to form a sandwich. Melt 1 cup semisweet chocolate chips. Dip one side of sandwiches in chocolate; place on a waxed-paper-lined baking sheet. Allow chocolate to set at room temperature.
