Ingredients

  • 1/4 cup no-salt added broth
  • 1 medium eggplant, cut into 1/2-inch slices
  • Juice of 1 lemon

Step 1

Preheat oven to 425 F.

Pour the broth into a roasting pan.
Place the eggplant slices into the pan, lightly coating them on both sides with the broth.

Bake for 10 minutes.

Turn eggplant slices over, and bake for another 10 minutes.

Add lemon juice and let set for a few minutes.
