Ingredients
- 1 cup raisins
- 1/4 cup water
- 1/2 cup shortening
- 2 cups sugar
- 2 medium eggs
- 1 tsp vanilla
- 3 3/4 cups coarsely grated zucchini
- 1 tsp grated orange rind
- 2 cups all-purpose flour
- 2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 cup chopped nuts
- Icing sugar

Step 1
In small saucepan, combine raisins and water; bring to a boil. Remove from heat and let cool. Cream shortening and sugar until light and fluffy. Beat in eggs, one at a time, beating well after each addition. With a wooden spoon, stir in vanilla, zucchini, raisins with liquid and orange rind. Sift dry ingredients. Add to creamed mixture, stirring until well blended. Fold in nuts. Spoon batter into greased 9-by-13-inch pan. Bake at 350 F for 60 minutes. Remove from pan and let cool completely. Dust with icing sugar or frost as desired.
