Lollipop Chicken

Lollipop chicken is baked with a tart but sweet "candy" glaze to create this sure to please meal time treat for kids.

Ingredients
- 12 chicken legs
- kosher salt
- black pepper
- 1/2 cup unsalted butter
- 1 lemon, zest and juiced
- 1/3 cup brown sugar
- 1/3 cup sesame seeds
- 1 teaspoon paprika
- grape seed oil - will not smoke when cooking at high heat

Preparation
Step 1
Heat the oven to 425. Lightly oil a cookie sheet with some grape seed oil. Using sharp kitchen scissors, cut down, about a 1/4" down the chicken leg bone. Using your fingers, push the meat down the bone, to form a lollipop. Then pull the cut end off of the bone, cutting away any lose tendons or fatty pieces that may have appeared after cutting. Remove the skin for the chicken. Lightly coat each leg with a little of the oil. Season with salt and pepper. Bake for 15 minutes, turn over the legs, and bake for another 10 - 15 minutes, until golden and cooked through. Remove from the oven. Lower the the heat to 350. Using a pastry brush, lightly brush each leg with some of the candy glaze. Slide back into the oven and bake for 7 minutes. Remove and let cool to finger temperature.
Candy Glaze
In a small saucepan add all of the ingredients (except chicken legs, salt and pepper), stir and cook over medium heat until the sugar is dissolved. Remove from the heat until ready to glaze the legs.
