Ingredients

  • 2 lbs large, very ripe tomatoes
  • 2 cups whipping cream
  • 1/4 tsp kosher salt
  • 1/8 tsp freshly ground pepper
  • 4 oz of favorite cheeses, grated (cheddar/parmesan; mozzarella/pecorino)
  • 1 garlic clove, minced
  • handful of fresh basil, chopped
  • 1 tsp chile flakes

Preparation

Step 1

Preheat oven to 425F. Slice tomatoes into thick slices and overlap the slices in a large baking or gratin dish. Cover the tomatoes with the whipping cream and season with the salt and pepper. Bake for 15 minutes or until the cream is boiling and the tomatoes have softened.

Combine cheeses with the minced garlic, chopped basil and chile flakes. Pre-heat the broiler, sprinkle the cheese mixture over the tomatoes and cream and pop under the broiler for about 5 minutes, until the cheese is golden and bubbling.

Serve with grilled fish or on its own with lots of crusty bread.
