  • 2 tablespoons water
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 1 tablespoon unsalted butter
  • 1 tablespoon small diced green bell pepper
  • 1 tablespoon small diced red bell pepper
  • 1 tablespoon small diced red onion
  • 1/2 cup shredded mozzarella cheese
  • 2 ounces pepperoni slices, about 12 slices
  • 2 slices tomato, optional for garnish
  • 2 sprigs fresh basil or parsley, for garnish

Step 1

SPECIAL EQUIPMENT: 8 inch seasoned omelet skillet

1. arrange the oven rack in the highest position and preheat the broiler
2. Put the eggs, water, salt, and pepper in a bowl and whisk until frothy.
3. Melt the butter in the skillet over medium high heat, add the diced peppers and onion and cook for about 1 minute, just until slightly tender.
4. Pour in the egg mixture and let sit until the bottom starts to cook. Using a rubber spatula, slowly push the cooked egg from one side of the skillet to the other, allowing the raw egg to reach the bottom and cook; this creates fluffiness and keeps the bottom from burning.
5. When the omelet is cooked on the bottom and the top is still runny, place the skillet just under the broiler with the oven door open and the handle sticking out, and broil until the omelet rises and browns lightly, about 1 minute.
6. Scatter the mozzarella cheese over the omelet, then arrange a single layer of pepperoni slices on top. Broil again to melt the cheese and crisp the pepperoni just slightly, about 2 minutes
7. Cut the omelet in half and place on 2 plates garnished with a tomato slice and sprig of fresh basil or parsley, if desired
