Ingredients
- 1 cup cooked zucchini
- 1 cup cooked, mashed carrots
- 1 1/2 to 2 cups flour
- 1 1/2 to 2 tsp baking powder
- 1/4 tsp salt
- 3/4 cup shortening
- 1 cup brown sugar
- 1 egg, beaten
- 1 tsp vanilla
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp cloves

Step 1
Cook zucchini and carrots until soft, drain and cool. Reserve the vegetable liquid. In a large bowl combine flour, baking powder, salt and spices. Cut in shortening and blend well. Add sugar, egg and vanilla. Stir in cooked and cooled zucchini and carrots. If the batter is too stiff, thin with the vegetable juice. Drop by spoonsful onto a greased baking sheet. Bake at 350 F oven for 15 minutes or until golden brown.
