Ingredients
- 8 cups vanilla soy milk
- 1 cup white jasmine rice
- 1 tbsp orange rind
- 3 tbsp maple syrup
- 1 cup raisins
- 1/8 tsp each cinnamon, cardamon, cloves, allspice and nutmeg
- 2 tbsp vanilla extract
- 1/2 tsp sea salt

Preparation
Step 1
In a large pot, place 6 cups of soy milk, rice, orange rind, syrup, raisins, spices, vanilla and salt. Bring to a boil, then reduce heat to low and allow it to gently simmer for about one hour (or until the rice has sufficiently softened). Stir occasionally to keep the rice from sticking to the bottom of the pot. Remove from heat and stir in the remaining 2 cups of soy milk. Delicious when served warm. Garnish with grated orange rind and calendula or shungiku flowers.
