Ingredients

  • Crust:
  • 1 1/4 cups all-purpose flour plus extra for dusting
  • 2 tablespoons superfine sugar
  • 1/2 cup butter, cut into small pieces
  • 1 tablespoon water
  • Filling:
  • 3 eggs
  • 2/3 cup light cream
  • 2/3 cup milk
  • freshly ground nutmeg

Preparation

Step 1

To make dough:
Sift flour into large bowl and add sugar. Add butter and rub it in with fingertips until mixture resembles breadcrumbs. Add water and mix to form a soft dough. Wrap in plastic and let chill in fridge for 30 minutes.

Roll out dough on a lightly floured surface to form a circle slightly larger then a 9 1/2 inch tart pan and use to line pan. Trim off edges. Prick dough with fork and let chill in fridge for about 30 minutes.

Line tart shell with foil and baking beans. Bake in oven preheated to 375 degrees for 15 minutes. Remove foil and beans and bake shell for 15 more minutes.

To make filling:
Whisk eggs, cream, milk and nutmeg (to taste) together in a bowl. Pour filling into baked tart. Return filled tart to oven and bake for 25-30 mintues or until just set.
