Ingredients

  • 4 slices thick-sliced bacon, diced
  • 3/4 cup diced red bell pepper
  • 1/2 cup diced onion
  • 1/4 cup dry sherry
  • 4 cups fresh corn kernels
  • 1 cup heavy cream
  • 1 teaspoon Tabasco sauce
  • Kosher salt and black pepper to taste
  • 1/2 cup thinly sliced scallions

Preparation

Step 1

Sauté bacon in a large sauté pan over med-heat until crisp. Pour off all but 1 tablespoon drippings. Add bell pepper and onion to sauté pan; cook until nearly soft, about 5 minutes.

Deglaze pan with sherry until liquid is nearly evaporated, scraping up bits from the bottom of the pan. Stir in corn, cream, and Tabasco. Simmer until mixture thickens, 3-4 minutes. Season salad with salt and pepper, then stir in scallions. Serve salad with Bourbon-Glazed Pork Kebabs.
