Ingredients

  • 2 lbs ground chicken or 2 chicken breasts cubed
  • 3 bell peppers
  • 4 cloves garlic
  • 1 onion
  • 2-3 roasted red peppers
  • Add 28 oz can of tomatoes
  • 1/2 c cream
  • 1 lbs rigatoni pasta

Preparation

Step 1

1. In a large deep skillet add some evoo - also separately in a large pot boil some water for the pasta.
2. Add your chicken to the oiled pot - once browned take out the chicken and set it aside.
3. Now add to your pot the peppers, onions, and garlic. Cook this down for a few minutes to - the onions should be slightly translucent add salt and pepper. Add the jarred roasted red peppers. Stir to combine.
4. Cook for a few minutes - then add back the chicken.
5. Now add the 28 oz can of tomatoes - let it simmer. To blush this sauce add the cream let simmer until the chicken is fully cooked and the flavors have combined.
6. Once the sauce comes together and riggis have cooked to your desired liking. Combine the two together - if the sauce is a little thick then you can use the pasta water to thin it out a little.
7. Top the pasta with basil and cheese - serve hot.
