Ingredients
- 1 cup plus 2 T warm water
- 2 1/4 tsp yeast
- pinch of sugar
- 3 cups flour
- 1 1/4 tsp salt
- 2 T olive oil
- 20 oz fresh spinach
- salt
- 2 T olive oil
- 12 oz Italian sweet sausages, casings removed
- 1/4 cup onion, chopped
- pepper
- 1 container ricotta
- 1/2 cup Parmesan

Step 1
Add yeast to water and let stand until foamy. Stir until yeast dissolves. In large bowl, combine flour and salt. Add yeast mixture and oil to flour and stir. Turn onto lightly floured surface and knead the dough until smooth and springs back. Lightly oil bowl, place dough in it, and cover until doubled, about 1- 1 1/2 hours. Punch down, divide into two balls.
Wash spinach and remove any large stems. Cook in large covered pot with 1/4 cup water and pinch of salt until tender, about 5 minutes. Drain, cool, and put in clean towel or cheesecloth to squeeze out as much liquid as possible. Chop.
In skillet, heat oil, add sausage and onion, and cook. Drain and add to spinach, ricotta, and parmesan. Add salt and pepper to taste.
Heat oven to 425. Oil 12-inch pizza pan. Roll out one piece of dough into circle and place in pan. Spread filling over dough. Roll out remaining dough and place over filling, firmly pinching together the edges to seal. Make slits in top to allow steam to escape. Bake until browned and crisp, about 30 minutes. Cool for 15 before cutting into wedges.
