  • 2 1/2 cups flour
  • 2 tsp ground cardamom
  • 3 1/2 tsp cinnamon
  • 1 1/4 cups butter, softened
  • 1/2 cup white sugar
  • 1 cup zucchini, grated

Step 1

Combine flour, cardamom and cinnamon in a bowl. In another bowl, cream together sugar and butter. Add the grated zucchini and stir well. Gradually add flour and spices, mixing very well. Form dough into ¾-inch diameter rolls and chill for 1 or 2 hours. Cut into slices and place on lightly greased cookie sheets. Bake at 350 F oven for 12 to 15 minutes.
