Ingredients
- 8 slices good quality white bread
- 6 oz. mature cheddar, shredded
- 3 eggs, lightly beaten
- 1/4 tsp. salt
- 1/8 tsp. paprika
- 1/8 tsp. cayenne
- 2 C. cream
- 1 T. chopped parsley
- 1 T. grated onion

Preparation
Step 1
1. Preheat oven to 350 F. Cut the crusts from the bread and cut the slices in half twice on the bias to make 4 triangles from each slice.
2. In an 8" preferably round buttered baking dish, lay half the pieces of bread in a pinwheel fashion.
3. Cover the bread with the cheese then cover the cheese with the remaining bread slices.
4. In a medium-sized bowl, blend together the eggs, salt, paprika, cayenne, cream, parsley and onion. Pour this mixture over the bread and let it stand about an hour before baking.
5. Bake for 1 hour until golden brown.
Note: If preparing the night before, follow recipe up to the point where bread and cheese are combined. Then prepare the egg mixture. Cover each separate dish with plastic wrap and refrigerate. Two hours before breakfast, complete the dish.
