Ingredients

  • 1/2 pkg. (10 oz.) frozen chopped
  • spinach, thawed and drained
  • 3/4 C. partly-skimmed ricotta cheese
  • 1/2 C. grated Parmesan cheese
  • 1/2 C. mushrooms, washed and chopped
  • 1/2 small red pepper, finely chopped
  • 1 egg
  • 1/4 tsp. dried oregano
  • 1/8 tsp. salt
  • Vegetable cooking spray

Preparation

Step 1

1. Preheat oven to 375°F.
2. Mix spinach, ricotta, Parmesan, mushrooms red pepper, egg, oregano and salt in a bowl.
3. Coat 18 miniature muffin cups lightly with vegetable cooking spray, divide the egg mixture among the cups. Bake for 25 minutes.
4. Unmold the frittatas and serve.
