Ingredients
- 1 pound 95% lean ground beef
- 1/4 cup chopped onion
- 1 tablespoon flour
- 8 ounces no salt added tomato sauce
- 3/4 cup water
- 1/4 cup chopped green bell pepper
- 1 teaspoon oregano
- 1 teaspoon chili powder
- 1 small eggplant, cut into 1/2" slices
- 1/8 teaspoon black pepper
- 1 cup shredded low fat Cheddar cheese

Preparation
Step 1
In a large skillet with a tight-fitting lid, brown ground beef and onion over medium-high heat. Stir in flour then add tomato sauce, water, bell pepper, oregano and chili powder. Sprinkle eggplant slices with pepper and place them on meat mixture; cover and simmer for 15 minutes or until eggplant is tender. Sprinkle with shredded cheese; cover and cook until cheese has melted.
SERVING SUGGESTION: A big salad tossed with Easy Balsamic Vinaigrette (see recipe). Add some bread sticks.
