Ingredients
- MOJO VERDE:
- 4 rounds Palhais (Portuguese goat cheese)
- 2 1/2 C. Mojo Verde (see recipe)
- 1 bunch cilantro
- 1 bunch Italian flat leaf parsley
- 4 cloves garlic
- 3/4 tbsp. Kosher salt
- 1 1/2 tbsp. cumin
- 1/2 tsp. freshly ground pepper
- 1 small green bell pepper (stemmed and seeded)
- 1 serrano pepper (stemmed and seeded)
- 3/4 c. extra virgin olive oil
- tbsp. sherry vinegar

Preparation
Step 1
Cut cheese rounds in half and slice, being care not to break the cheese. Carefully mix in the Mojo Verde and marinate for up to three days.
MOJO VERDE:
Rinse and roughly chop the cilantro and parsley. In a food processor, finely mince the garlic. Add the salt, cumin, black pepper, and fresh peppers; process until smooth. Add the cilantro and parsley and puree. Slowly pour the olive oil into the sauce. Add the vinegar and blend well. Season with additional salt if necessary.
