Ingredients

  • FOR BLINI:
  • 1/4 cup red onion, finely chopped
  • 2 ounces salmon caviar
  • 11/2 cups chopped hard-boiled eggs
  • 2 tablespoons parsley, finely chopped
  • 4 tablespoons creme fraiche or sour cream
  • 1 ounce Seuruga caviar
  • 1/2 cup all-purpose flour
  • 1 large egg
  • 1/2 cup milk
  • 1 tablespoon melted butter
  • 1 1/4 tablespoons salt
  • 1/2 teaspoon baking powder

Preparation

Step 1

Layer ingredients into martini glasses starting with onion, salmon caviar, egg, parsley and sour cream. Top with Sevruga caviar and garnish with a blini.

For Blini:
Combine ingredients and whisk until
smooth. Heat crepe pan until hot and grease lightly. Drop batter by teaspoons and cook, turning once, until brown. Each blin should be silver-dollar size.
